Hamza Javed, the hand behind every dish

Behind every dish is Hamza Javed, with over 15 years at the stove.
He trained in India, in traditional Punjab kitchens, alongside tandoor masters.
There he learned what isn't in any book: the point of each spice and the moment of each ember.
He brought those recipes and that technique to Ponferrada, without watering them down for local palates.
He cooks as he would for his family: fresh produce, spices ground daily and zero shortcuts.
